Chocolate Monster Whoopie Pies




Happy Friday! These chocolate monster whoopie pies are perfect for Halloween week! They are relatively easy, and you can make them any size you want. Here is the recipe:

Ingredients:

Cookies:
4 oz. semisweet chocolate
2 oz. unsweetened chocolate
1 cup sugar
1/2 cup unsalted butter
3 eggs
1 tsp. vanilla
1 cup flour
1/4 cup cocoa powder
1/2 tsp. baking powder
3/4 tsp. salt

Buttercream filling:
1 tsp. vanilla
3/4 cup unsalted butter
2 Tbsp. heavy cream or milk (more as needed)
3-4 cups powdered sugar

Preheat oven to 375 degrees. Put Silpat on baking sheet or line with parchment paper. Melted butter and chocolates in the microwave at 50% power one minute at a time until completely melted. Mix with the rest of the ingredients. Scoop out dough by rounded tsp. or Tbsp. (depending on the size whoopie pies you want). I piped mine using a piping bag to make them more uniform and I made mine about a Tbsp. size. Bake for about 6 minutes (an extra minute or two if you make them bigger). Let cool completely.

Whip together the buttercream ingredients and put into piping bag.  Match the cookies that are the closest in size and shape. Pipe buttercream on one cookie and create a sandwich with the matching pair. Use a small dot of buttercream to adhere eyes to the top to complete the monster. Enjoy!

Fall Colors

I can't believe the beautiful fall colors all around and the weather has even been nice enough to wear skirts and dresses and not freeze (my ideal fall weather!). We don't usually get that for long in Michigan. I have been wearing this faux fur vest a ton lately. I love that it is lightweight and the back is a sweater. It is from last year but I linked a similar one. These Frye ankle boots are one of my favorite pairs. They are so comfortable and can be worn so many different ways. This maroon/wine color is also one of my favorites this season.

TGIF! I am loving flares this season and although I have bought quite a few this fall, these ones are actually quite a few years old from Anthropologie. I linked others that are very similar. I love mixing flares into my jeans rotation. It's a nice change of pace from all skinnies all the time. Also, I love print mixing and leopard and stripes are one of my favorite combinations.

This is my favorite color this fall. As I have said before, I can't stop buying things in this color. This wrap dress is perfect because it can be dressed up or down. I added a pop of leopard (and plaid) to finish the look. This blanket scarf is ones of my favorites from last fall, but I linked similar ones from this season.

Happy Monday (and a very special Monday indeed--my birthday)! I love any reason to celebrate and birthdays are no exception. I think 26 is going to be a great year!
I LOVE this dress. For the price, I am so shocked at the quality of it! The material is thick and stretchy and fit perfectly for the most part (a little big on the top). I love that it is the perfect length with 4 inch heels--that's not easy to find when you are tall! I wore this to a recent wedding we attended. I was considering using Rent the Runway and found a perfect red floor length dress, but when I saw this one I had to try it out! It was perfect for the occasion. This was our last wedding of 2015 and we have just 4 more to go in 2016 before ours :) The countdown continues!
