So, fruit pizza is my all time favorite summer treat! I make it every year and it is ALWAYS a hit. The soft sugar cookie crust is perfect with the cream cheese & Cool Whip frosting. The fresh fruit adds the perfect summery-fresh touch! I'm telling you, if you make this treat you won't be disappointed!
Here is the recipe:
For the crust:
1/2 cup butter
1/2 cup margarine
1 tsp. vanilla
1 egg
1 cup sugar
2 cups flour
1/2 tsp. baking soda
1/2 tsp. cream of tarter
1/4 tsp. salt
Bake at 350 degrees for 8-12 minutes
For the frosting:
1 (8 oz.) package of cream cheese
6 oz. Cool Whip
1/2 cup powdered sugar
Arrange any fruit you would like on top!

I usually bake the crust a day before frosting it and putting on the fruit. You should definitely wait to make the frosting and arrange the fruit until right before you are ready to serve.
