Patriotic Shortbread





Happy Memorial Day weekend! I wanted to make an easy and festive treat for the weekend and I love shortbread so this was the winner. The cookies took a little longer than expected to roll out and cut, but it was worth it. These are delicious and so festive! 

Ingredients: 

3 1/2 cups flour

1 tsp. salt

1 1/2 cup unsalted butter

1 cup powdered sugar

2 tsp. vanilla

1/2 - 1 cup any type of jam/jelly (I used Bonne Maman Strawberry Preserves)

Preheat oven to 350 degrees. Mix together flour and salt. In another bowl, cream the butter and sugar and add vanilla. Add flour slowly. Sometimes it is easiest to mix with your hands at the end. Wrap in saran wrap and refrigerate (optional, but makes it easier to roll out). Roll out the dough and cut scalloped circles. In half of the circles, cut out a mini star. Bake for 12 minutes or until just a little bit brown on the edges. Once cooled, add jelly or jam and create sandwiches. Dust with powdered sugar and serve.
