Jack-o-lantern Cookie Sandwiches

 I recently tried Half Baked Harvest's recipe for these jack-o-lantern cookie sandwiches, and they are AMAZING. They were such a hit! Here is her full post about them, if you want a little more info, but I wanted to post the recipe here as well. They are a must try!



Cookie Ingredients:

1 1/2 cups butter, softened

1 1/4 cups light brown sugar

1 tbsp. pure vanilla extract

2 eggs, room temperature

4 1/2 cups flour

1 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. ginger 

1/4 tsp. nutmeg

1/2 tsp. salt

12 oz. milk chocolate, melted

Cinnamon Sugar Coating:

2 tbsp. butter

3 tbsp. cinnamon sugar


Mix butter, sugar, and vanilla. Add the eggs, one at a time. Add the flour, baking soda, cinnamon, ginger, nutmeg, and salt. Flour surface. Roll out dough to 1/4 inch thickness. Cut over the cookies using pumpkin cookie cutters (half with jack-o-lantern faces and half full pumpkins). I used these from Etsy. Cover the baking sheet and place in freezer for 15-20 minutes. Roll out scraps, and repeat with remaining dough.

Bake at 350 degrees for 8-12 minutes. Do not over bake. Cool for five minutes.

Melt butter on stove. Remove from heat and let cool for five minutes. Brush the butter over the top half of the cookies and then sprinkle the cookies with cinnamon sugar.

To assemble, spread melted chocolate over the half of the cookies with no face. Place the top pumpkin faced cookie on top, gently pressing to adhere.
