Pumpkin Oatmeal Dark Chocolate Cookies








On a rainy fall Saturday, the best thing to do is bake some yummy fall treats!  These pumpkin oatmeal cookies with dark chocolate chips are delicious, and they are the perfect fall dessert.  Here is the recipe:

1 cup butter, softened
1 1/2 cups oats
2 1/2 cups flour
1 tsp. baking soda
1 1/3 cups brown sugar
2/3 cups sugar
1/4 tsp. nutmeg
1/4 tsp. ginger
3/4 tsp. salt
1 tsp. vanilla
1 egg
1 1/4 cups pumpkin puree
1 3/4 cups dark chocolate chips

Bake at 350 degrees for 12-15 minutes.  I highly recommend using a Silpat (nonstick and easy to use and clean!) but parchment paper or a greased cookie sheet will also work. Allow to cool and enjoy!
