Pumpkin Cream Cheese Cake Balls








Happy Halloween! I made these Pumpkin Cream Cheese Cake Balls for school, and they were delicious! They are the perfect fall treat.  I also have been getting some questions about how to make cake pops/cake balls, so I thought I would share a step by step guide :)  I actually did not have the melting chocolate I always use on hand, so I used bars of Lindor white chocolate instead.  It wasn't the ideal consistency, but it got the job done.

First you bake a pumpkin cake or spice cake just as you would making a regular 13x9 cake.  You can make this from scratch or use a box mix if you are short on time (I used a spice cake recipe and added some pumpkin pie spices).  

Once the cake is cooled, crumble it into tiny pieces in a bowl.  Remove any hard edges or discolored cake, if there is any.  Mix in about 1/2 cup to 3/4 cup of the frosting of your choice.  For these I used cream cheese frosting.  Once again you can make it from scratch or use a can of frosting.  Mix thoroughly then roll into balls (about 1"). Put the cake balls into the refridgerator for about an hour.

Then melt the chocolate on the stove using a double boiler or in the microwave at 50% power.  Dip the cake balls into the chocolate and decorate as desired. You can also add a stick if you want. I chose some fall sprinkles and added a few spiders for a Halloween theme.

So, one of my favorite places to shop is H&M, and I can't get enough plaid this fall!  I am pretty much wearing H&M from head to toe today.  It is really important that I am comfortable at work because I am very often sitting on the floor with my first graders or running around after them. H&M is the perfect place to find comfortable, affordable, and stylish pieces. A plaid shirt and comfy sweater are my go-to picks for work.  They are cozy, comfortable, and cute.  I love layering in the fall especially with the chilly weather we have been having.  This tassel necklace and chunky diamond bracelet are also daily go-to pieces for me.  Thanks for stopping by!

No better way to start a week than with the perfect fall color combination. When I saw this blanket scarf from Zara I knew I had to have it.  It has the perfect fall colors and I love Zara blanket scarves!  I knew this scarf would go perfectly with my over the knee Tory Burch boots.  I absolutely love sunflowers and I can never pass them up when I see them.  They are the perfect fall flower. Happy Friday! Hope you are all having a great week! I need to start off by saying how much I LOVE this faux fur coat by Altuzarra for Target.  I had been eyeing it since they previewed the line and I was patiently waiting until the day the line came out in stores.  I purchased mine online right away (I knew they would sell out quickly) and I am so glad I did! Cozy Birthday Dinner

It's a rare occasion that Zach agrees to be in any blog post pictures, but I guess birthdays are an exception :)  This was on my birthday, right before my birthday dinner at one of my favorite restaurants.  I had such a great birthday filled with so much love, and I think 25 is going to be a great year.  It was a sunny but chilly day so I wanted to wear something cute, but cozy.  I have been dying to wear this scarf and it was the perfect weather for it.  I have wanted this Zara scarf for forever and when I saw the look-a-like from Brina Box I knew I had to snatch it up, and boy am I glad I did.  It is so similar to a Zara blanket scarf (and just as cozy)! I have also wanted this Tory bag for so long and I got it for my birthday.  It is the perfect color and size.  It is such a classic bag, I don't think I will ever get tired of it! Date Night

This is the perfect comfortable outfit for a weekend date night.  This weekend the weather was quite chilly.  I wore this outfit for a movie and drinks, and it was the perfect combination of comfort and style.  These booties were a fabulous find last season from Target, however I linked similar ones.  I can't get over how gorgeous the trees are looking around here right now! The colors are amazing! Even though it was a gray day, the trees added the perfect pop of color for these photos :)
