Pumpkin Whoopie Pies

Today I'm sharing a delicious fall treat...pumpkin whoopie pies! The cookies are so good alone, but with the cream cheese buttercream filling they are even better! I used a piping bag to pipe the cookies on the baking sheet to make sure they were uniform. I also used one for the frosting. I put chocolate sprinkles on the edge of some of them also (I can never say no to chocolate!).









Here is the recipe:

Cookies:
1 cup butter or shortening
2 cups brown sugar
3 1/2 cups flour
2 eggs
1 tsp. vanilla
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1 tsp. pumpkin pie spice
1 1/2 cups canned pumpkin

Frosting:
8 oz. cream cheese
1/2 cup butter
2 cups powdered sugar
1 tsp. vanilla

Bake at 400 degrees for 5-6 minutes.  The larger you make the cookies, the longer they will take (up to 10-11 minutes).  I made mine smaller so they only needed 5 or 6 minutes.

These are AMAZING! They taste like fall. I highly recommend using a Silpat on your baking sheet, which can be found here.  Here is the Mackenzie-Childs pedestal platter pictured.
