Chocolate Peanut Butter Cup Cookie Sandwiches









Cookies:
3/4 cup butter (room temperature)
1/4 cup brown sugar
3/4 cup sugar
1 egg
1 tsp. vanilla
2 cups flour
2 tsp. cornstarch
1 tsp. baking soda
3.4 oz package dry instant chocolate pudding
2 tbsp. cocoa powder
1 cup Reese's cups chopped
3 tbsp. milk

Frosting:
1 cup peanut butter
1/2 cup butter
3 tbsp. milk
2 cups powdered sugar

Preheat oven to 350 degrees. Mix butter and sugar then add vanilla and egg. Add flour, baking soda, dry pudding mix, cornstarch, and cocoa powder. Add milk. Stir in chopped Reese's. Make into 1 inch balls and flatten a little before baking. Bake for 7-8 minutes. Let cool completely before putting together with frosting. I piped the frosting on using an icing bag, however you could also just spread it on with a knife. 

These cookie sandwiches are SO delicious. This peanut butter buttercream frosting is one of my all time favorites, and it is good on just about everything.
