Auntie Weekend, Apple Picking, and Pie, Oh my!

I had SUCH a great weekend with my favorite little babe.  She is so cute and always smiling! We went apple picking and I showed her how to bake mini apple pies! We also did a lot of twinning and snuggling of course.

Here is the apple pie recipe I use:

Apples (about 6-7 large apples for a regular sized pie) finely cut 
*I use this to cut them, and always have, it's awesome
1/3 cup sugar
1/4 cup flour
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/8 tsp. salt
2 tbsp. margarine or butter (to dot before baking)

Bake at 425 degrees. For regular pie about 45 minutes.  I have been wanting to try to make mini pies, and used these pie pans.  They were a little more work than I expected (4 x the work of a regular pie), but they turned out SO cute!  I baked my mini ones for about 20-25 minutes.
