Red Velvet Whoopie Pies

2 cups flour
2 tbsp. cocoa powder
1/2 tsp. baking powder
1/4 tsp. salt
8 tbsp. butter at room temperature
1 cup brown sugar
1 egg
1 tsp. vanilla
1/2 cup buttermilk at room temperature
red food coloring

Cream Cheese Buttercream
8 oz. cream cheese
1/2 cup butter
3-3/12 cups powdered sugar
1 tsp. vanilla

I made a heart stencil to pipe the hearts so they would be uniform.  I had my assistant trace a cookie cuter onto a white piece of paper (thanks Zach). He put they pretty close together so I decided to do every other so they wouldn't run into each other when baking. Bake at 375 degrees for 7-9 minutes for full size hearts. I did smaller hearts so I baked for 5 minutes. Let cool completely before piping cream cheese buttercream inside and making into sandwiches.
