Brown Sugar Cinnamon Scones with Maple Glaze

I made these delicious scones twice already because they go FAST. They are so fluffy and perfect with coffee. If you don't want them as sweet, skip the glaze and the cinnamon sugar on top before baking. They truly are amazing without the glaze as well.

Ingredients

2 1/4 cups flour

2 tsp. baking powder

1 tsp. cinnamon

1/2 cup salted butter

2 eggs

1/2 cup milk or cream

1/4 cup brown sugar

1/2 tsp. vanilla

Maple Glaze

1/2 cup powdered sugar

1/2 tsp. vanilla

2 tbsp. maple syrup

1/2 tbsp. cream or milk

Mix eggs, cream/milk, vanilla, and brown sugar. In another bowl whisk together flour, baking powder, salt and cinnamon. Cut the butter into the flour mixture until you have a crumb mixture. Male a well in the center and add the egg mixture. Mix until just combined. On a floured surface, knead mixture and create a circle. Cut into 8 or 16 triangles (depending on how big you want them - I usually do 16). Separate on baking sheet lined with parchment paper or Silpat. Sprinkle cinnamon sugar on top then bake at 375 degrees for abut 12 minutes.

Let cool then spread glaze over the top. Store in refrigerator. These are also delicious without the glaze, but they are divine with it!

Enjoy!

Salted Dark Chocolate Caramel Pretzel Bars

I recently tried out this new recipe and I have to say... they are DELICIOUS. I feel like I always say that on here, but there are fails as well, I just don't share them! This is definitely one I will make again. The best part it how EASY they are to make. See ingredients and directions below.

Ingredients

12 oz. package dark chocolate chips

8 oz. mini pretzels (half of a regular 16 oz. bag)

11 oz. bag Kraft Caramels (or homemade caramel)

Sea salt

Directions

Line baking sheet with parchment paper or Silpat

Melt 8 ounces of chocolate (if using the microwave heat on 50% power stirring every 15-30 seconds).

Melt caramels in a separate bowl (add 2 tbsp. water and heat on high in microwave)

Spread chocolate evenly and add pretzels on top then add caramel. Drizzle caramel on top.

Melt remaining chocolate and drizzle on top. Add sea salt.

Cupid Chow

This year I made a super easy Valentine's Day treat, cupid chow! Puppy chow is ALWAYS one of my favorite treats and I usually make it in the summer. All you need is a cup or two of red and pink m&ms and you have a festive Vday dessert! Below is the recipe I use. I like my puppy chow with extra peanut butter and chocolate and big chunks (IMO the best part!). The trick is to let the peanut butter/chocolate mixture cool awhile before putting it on the cereal, then letting it sit before adding the powdered sugar.

Ingredients:

1/2 cup butter

1 cup butter

1 box (12.5 oz) Crispex or 6 oz. rice Chex and 6 oz. corn Chex

12 oz. chocolate chips

3 cups powdered sugar

1-2 cups Valentine's m&ms

Directions:

Melt on stove, carefully stir in cereal until fully coated.

Shake with 3 cups powdered sugar

Mix in m&ms

Enjoy!

Super Bowl Spreads

With Super Bowl LVI just around the corner, I wanted to share a few ideas if you are hosting or attending a Super Bowl party! For a few years in a row I made chocolate covered strawberry footballs. They are always a hit and very easy. Also you can make any dessert in the shape of a football if you have a football cookie cutter. I've done cookies and brownies and both were quite easy. Last year I made the snack spread with the football cheeseball as the feature! Below is the recipe.

Football Cheeseball

2 eight ounce blocks cream cheese (room temperature)
2 cups shredded mozzarella
1 cup grated Parmesan
1 tbsp. chopped parsley
2 cloves garlic, minced
1 tsp. crushed red pepper flakes
Pepperoni
1 slice mozzarella cheese (for details)

Combine cream cheese, mozzarella, parmesan, parsley, garlic, crushed red pepper flakes, and season with salt and pepper. Transfer to serving platter and form into a football shape. Lay pepperoni on top and top with mozzarella "laces".

For this year I made some football cookies and tried some new cookies to look like the field, goal posts, and crowd. I love how they turned out! I didn't even use royal icing for these, I just used regular buttercream and they are delicious! I also dyed some coconut green to look like grass or turf and used some Valentine X and O gummies to show some plays. I used colored m&ms for the outside and it was SO easy to put it together. I don't really care who wins, but of course you could write whatever you want. I just used pre-made letter cookies from Trader Joes!
